RKS 2025 CANADIAN Wine: Thirty Bench 2020 Winemaker’s Red Blend

A blend of Cabernet Sauvignon, Cabernet Franc and Merlot.

Aroma: Dense notes of blueberry, blackberry, cassis and a bit of milk chocolate.

Palate: Full bodied jammed with black fruit. Tannic. Its acidity is not shy to reveal itself but the death knell of “vibrant acidity” for red wine is not ringing but its noticeability demands food with its consumption. Not one of those sipping wines. Short finish.

Personality: Hey man I am a cool dude and despite the mention above my acids are noticeable I assure you I have never dropped any acid!

Food Match: Cabbage Parm. See the recipe in the New York Times. The caramelized cabbage, tomato sauce and cheese remove the funk from the cruciferous cabbage.

Cellarbility: Given the slight acidity I would consume in 2025.
